Autolyse

When you roughly mix together a bread dough, leave out the salt (and often the yeast too) and allow it to remain undisturbed for 20min -1 hour.  This step promotes enzymatic activity (namely protease and amylase) which ultimately makes the final dough more extensible, more flavorful, better colored and with a longer shelf life.
