Ingredients
Merengue
- 93 g Egg Whites Approximately 3 eggs
- 138 g Sugar
- ½ tsp Vanilla extract
Whipping Cream
- ½ Pint Heavy Whipping Cream 232g
- 11 g Sugar
Instructions
- In a bain-marie, heat your egg whites, sugar, and vanilla extract to 125°F.
- Whip on high until thick and full volume (approximately 4 minutes).
- Spread the merengue on parchment paper in desired shape. Leave a border with a thinner middle.
- Place in a 200°F convection oven for about 2 hours. Turn off the oven, prop the door open, and allow to slowly cool.
- When fully cool, transfer to serving dish and top with whipping cream and fruit.
