Pavlova

Ingredients

Merengue

  • 93 g Egg Whites Approximately 3 eggs
  • 138 g Sugar
  • ½ tsp Vanilla extract

Whipping Cream

  • ½ Pint Heavy Whipping Cream 232g
  • 11 g Sugar

Instructions

  • In a bain-marie, heat your egg whites, sugar, and vanilla extract to 125°F.
  • Whip on high until thick and full volume (approximately 4 minutes).
  • Spread the merengue on parchment paper in desired shape. Leave a border with a thinner middle.
  • Place in a 200°F convection oven for about 2 hours. Turn off the oven, prop the door open, and allow to slowly cool.
  • When fully cool, transfer to serving dish and top with whipping cream and fruit.
